Ingredients
- 1 lb boneless chicken thigh
- 4 Burger bun
- 4 cheese slice
- Baby spinach
Marinade
- 4 tbsp oil
- 2 tbsp Alexandra’s Pikliz
- 2 tbsp Jerk Chicken seasoning
- Salt and pepper to taste
Mango Salsa
- 2 Mango
- 2 bell pepper
- 1/2 onion
- 2 tbsp lime juice
- 2 tbsp Alexandra’s Pikliz
- Salt and Pepper to taste
Steps
- Clean and wash chicken thigh, pat dry.
- Marinade oil, jerk seasoning, and Alexandra’s Pikliz over night.
- In a lightly oiled, heated pan, sear chicken thigh on high heat for 2 min each side.
- Turn to low-medium heat, and continue grilling, flipping every 2 min until internal temperature reaches 165F
- While the chicken is searing, prepare the mango salsa by dicing bell pepper, mango, and onion.
- Mix diced ingredients with lime juice and Alexandra’s Pikliz.
- Toast burger buns, and assemble.
- The burger is very flavourful without any additional dressing, however, if you want an extra kick, add another heap scoop of Alexandra’s Pikliz!
